Explain Estufagem Process?
The process used for lowest quality Madeira.
- After fortification, wine is transferred into a large tank.
- A system of pipe inside to tank warm up the wine up to 45/50°C for 3 mth
- WIne is cool down, and leave to rest for 3 mth (Estagio)
- Racked out in a wooden cask for 3 to 5 years depending style and grapes
- Mainly used in blended wines
