WHAT IS IT

A

FIFO and LILO are stock rotation principles which to be adhered to within the hospitality industry

  • All FOOD items should be labelled and dated and in a stock rotation system such as FIFO or
    LILO
  • Date codes/rotation labels are also common
  • These techniques require food handlers to store new purchases behind older purchases to
    ensure food is used by its best before date and before new items are purchased
    ➔ Forces older stock to be used first

  • Safe storage requirement → effective communication ensures successful communication with staff
