WHAT IS IT
A
FIFO and LILO are stock rotation principles which to be adhered to within the hospitality industry
- All FOOD items should be labelled and dated and in a stock rotation system such as FIFO or
LILO - Date codes/rotation labels are also common
- These techniques require food handlers to store new purchases behind older purchases to
ensure food is used by its best before date and before new items are purchased
➔ Forces older stock to be used first

- Replenishing milk puts the newest date at the back or when replenishing a bain marie
- Coloured coded sticker rotation to indicate when stock needs to be removed → Eg red = monday
- Safe storage requirement → effective communication ensures successful communication with staff
