WHAT ARE STRATEGIES TO UPHOLD THE FOOD REG ?
A
- Taking regular temperature of food to ensure it is sitting outside of the temperature danger zone (5-60)
Storing food in a stock rotation system such as FIFO and LILO. This ensures that food is at its desired condition for consumption and minimises food wastage - Designated hand washing sink
- Implementing effective record keeping practices such as a delivery docket
- Ensuring establishments having a well trained FSS, whose license is current
- Following a cleaning schedule that clearly sets out all employees cleaning jobs
- Ensuring that throughout the food production cycle critical limits are established to ensure employees are aware and to ensure the optimal safety of food
