What is the definition of conduction ?
A
Conduction is a method of heat transfer where the food comes into direct contact with the cooking medium (equipment)
Heat passes through a solid item, such as a saucepan, frying pan or hotplate.
This process relies on using good conductors of heat, with metals being the best.

What are specific examples of methods that use conduction ?
A
Stir-frying, shallow-frying and sauteing.
- When cooking a steak the pan or grill plate cooks the actual food
- When cooking stir fry the wok cooks it through the transference of heat
- During the cooking of gyros the frying of meats and halloumi
- Frying of pork mince for dumpling
