PHYSICAL CONTAMINATION DEFINITION
Foreign substances that enter the food during production, delivery, storage or preparation and service
PHYSICAL CONTAMINATION EXAMPLE
- Glass
- Human or animal hair
- Plastic/metal shavings (packaging,sharp knives)
- Insects
- Bandaids/gloves
- Jewellery
- Fingernail clippings (nail polish)
PHYSICAL CONTAMINATION PREVENTION METHODS
- Wearing gloves over bandaids
- Maining high standards of personal hygiene
- Minimising jewellery
- Not using chipped crockery
- Wearing a hair net
CHEMICAL CONTAMINATION DEFINITION
Caused by the presence of chemicals in food. This can occur due to sanitisers not being rinsed thoroughly or fruit/veggies not being washed thoroughly
CHEMICAL CONTAMINATION EXAMPLE
- Pesticides, insecticides
- Cleaning agents and naturally occurring toxins that have entered food during the production cycle
CHEMICAL CONTAMINATION PREVENTION METHODS
- Ensuring all fruit and veg are washed to avoid pesticides
- Rinsing all dishes after chemical cleaning
- Frequent disposal of rubbish
- Keeping cleaning products in a seperate location
MICROBIOLOGICAL CONTAMINATION DEFINITION
When a food has been contaminated by microorganisms, including bacteria, viruses, mould, fungi, and toxins
These include naturally poisonous foods

- Mushrooms
- Moulds/ yeasts (natural toxin)

- Disposing of all mouldy products
- Sufficient storage to the particular food
