DETERIORATED

A

SIGNS

  • Natural decay of food
  • The texture of food (shrivelled, changed sized)
  • Flavour been exploited to some degree (become bitter, sour, sweet)
  • Discoloured (eg apple that is cut open and left out it will oxidise and turn brown)
  • Smell (unpleasant)

EXAMPLES

  • Milk (lumpy and curdle)
  • Apple or Nectarine shirviled

SIGNS

  • Visible contamination lessen in quality due to particular factors
  • Burnt
  • Mould
  • Texture
  • No longer at optimum quality due to often human factors eg poor handling - not storing right temperature, incorrect storage - exposed to oxidation
  • Pick good quality products

EXAMPLES

  • Stale chips
  • Burnt toast
  • Mouldy bread
  • Bread = crusty
