- Natural decay of food
- The texture of food (shrivelled, changed sized)
- Flavour been exploited to some degree (become bitter, sour, sweet)
- Discoloured (eg apple that is cut open and left out it will oxidise and turn brown)
- Smell (unpleasant)
EXAMPLES
- Milk (lumpy and curdle)
- Apple or Nectarine shirviled

SIGNS
- Visible contamination lessen in quality due to particular factors
- Burnt
- Mould
- Texture
- No longer at optimum quality due to often human factors eg poor handling - not storing right temperature, incorrect storage - exposed to oxidation
- Pick good quality products
EXAMPLES
- Stale chips
- Burnt toast
- Mouldy bread
- Bread = crusty
