Cane syrup is the suger cane juice that is reduced to a syrup.

Molasses is what’s left after reducing the cane syrup even further. There’re various different grades of molasses, the one used in Caribbean is called Blackstrap molasses

Light marks: distilled to a high strength, often in excess of 90% abv. - light flavour intensity
Heavy marks: disitlled to a low strength, usually in pot stills - a lot of flavours are kept.
What does continentally aged means?
It’s when a rum is distilled in the Caribbean and then shiped to Europe to be matured. It a lot colder climate in Europe which will give a completely different character.
What does Tropically aged means?
It means that it’s matured in Caribbean where it’s warm and it will mature a lot faster.
Is it okay to blend a rum that’s been on oak with a rum that’s been on inert vessle?
yes, all types of rum is okay to blend
After blending a rum the distiller have three different techniques to affect their rum, which three?
- Filter the rum through activated charcoal to remove the colour.
- Add caramel colour, to maintain colour consistency
- Sweetened prior to release.

What’s the difference between the labels “Jamaica Rum”, “Jamacian Rum” and “Rum from Jamaica”?
“Jamaica Rum” is aged and bottled in Jamaica, meanwhile “Jamaican Rum” or “Rum from Jamaica” are shipped in bulk and matured, finished and bottled elsewhere. They’re allowed to add sweetness, while you’re not allowed to add sweetness in Jamaica.
