Q

what acids are found in canola oil

A

Canola is a low erucic acid rapeseed, containing less than 2 percent erucic acid in contrast to the 45 percent erucic acid in rapeseed from which canola was developed

Q

what is erucic acid

A

Erucic acid is a monounsaturated fatty acid that imparts a bitter taste to the rapeseed oil and meal and, at one time, was believed to increase risk of heart disease in humans

Q

since The small canola seed cannot be effectively dehulled prior to oil extraction what does this mean

16
Q

why is canola meal not a fan favourite for animal feeds

A

The meal contains glucosinolates and other negative factors that affect nutritional value, colour and palatability and limit inclusion rate in feed

17
Q

is canola meal or protein used for human consumption

A

Canola meal or protein is not currently used in the production of foodstuffs for human consumption.

18
Q

what is canola oil used for

A

Canola oil is considered to be a general purpose oil used in salads, as a frying oil, a food ingredient, in the production of margarines and shortenings and in biodiesel production

19
Q

is canola oil considered healthy? why or why not

A

The low saturated fatty acid content in canola oil supports its designation as a “healthy” vegetable oil

20
Q

what can happen if you refrigerate canola oil

A

Refrigeration can cause some precipitation of fat because of the oleic acid content, similar to that found in olive oil

21
Q

what much be done to liquid canola oil for oxidation instability and what is it due to

A

Liquid canola oil must be brush hydrogrenated to compensate for oxidative instability due to linolenic acid content.

22
Q

who has joined forced to work on canola and whats there goal

A

Plant breeders and genetic engineers have joined forces to continue the evolution of canola into a higher quality oilseed

23
Q

what new canola seeds are being produced

A

New fatty acid profiles, including lines high in saturates, very high in oleic acid or low in linolenic acid, have been developed, and new lower fibre, clear-seed-coated (so-called “yellow-seeded”) varieties are soon to be commercialized. High erucic acid varieties are currently in production. High erucic acid rapeseed (HEAR) is grown under contract to supply demand for erucic acid used in the production of lubricants and plastics. In addition, canola-quality Oriental mustard (Brassica juncea) is under development

24
Q

what will the new varieties of canola help contribute to

A

This will make new, higher yielding varieties of canola with enhanced drought, heat, and disease resistance available.
