what species does the Canadian poultry grading system apply to
The Canadian poultry grading system is applied to carcasses of chickens, Rock Cornish hens, turkeys, ducks, geese and Guinea fowl
what form of the bird is the grading system used for
The grade designation is only used for whole birds

There are three grades for poultry carcasses: namely Canada A, Canada Utility and Canada C

The grades are based on carcass conformation, fleshiness (muscling), fat and dressing (surface characteristics).
what qualities must a grade A poultry have
Canada Grade A poultry have normal skeletal structure with a moderately plump breast, some fat cover, no more than minor skin tears and no parts missing
what qualities would a bird that’s been downgraded to utility have
Poultry would be downgraded to Utility Grade if there are major tears, missing skin or if some parts such as a wing or leg have been removed due to bruising or other damage
what qualities would bird in the C category have
The Canada C grade is assigned to mature birds which may also be retailed as stewing hens, regardless of their gender
how do the maple leafs on packaging work
The colour of the maple leaf with the contained grade is specific to the grade of the bird

Grade A labels have a red maple leaf
