Clarification as to why the stress point in on the υ rather than the ε:

ευ in the word δουλεύω is a diphthong.
A diphthong is a combination of two vowels pronounced as a single sound.
In Modern Greek, when a diphthong is present, and the stress falls on the second vowel of the combination, the accent is placed on the second vowel (in this case, the υ).
