What is bile?
A
A lipid emulsifier that breaks larger lipid globules into smaller ones and allows them to be suspended in a watery environment

How are lipids emulsified in the small intestine?
A
- Large lipid globules that are too large for lipase to act on enter the small intestine
- Bile is released from the liver and gall bladder into the small intestine
- Bile salts have hydrophobic tails and hydrophilic heads. The tail attach to lipid and head face the watery lumen
- The arrangement of bile salts and intestinal movement causes lipids to break down into micelles
- Micelles can be suspended within water and allow for lipase to act on it.
