How are lipids emulsified in the small intestine?

A
  • Large lipid globules that are too large for lipase to act on enter the small intestine
  • Bile is released from the liver and gall bladder into the small intestine
  • Bile salts have hydrophobic tails and hydrophilic heads. The tail attach to lipid and head face the watery lumen
  • The arrangement of bile salts and intestinal movement causes lipids to break down into micelles
  • Micelles can be suspended within water and allow for lipase to act on it.
