, the Nevado Ojos del Salado

A

massive volcano in the Andes mountain range on the Argentina-Chile border. Its name, which means “eyes of salt,” comes from the enormous deposits of salt that appear in its glaciers, which remind observers of large lagoon-like eyes. Nevado Ojos del Salado is the highest active volcano in the world, measuring 6,893 meters (22,615 feet) above sea level. It is also the second highest mountain in the Western and Southern hemispheres and the highest in Chile. The highest mountain in the Western Hemisphere, the Aconcagua, is only about 600 kilometers (370 miles) away on the Argentina-Chile border. The height of the Nevado Ojos del Salado may lead you to believe that it is constantly covered in snow. However, because it is located in the Atacama Desert, dry conditions mean there is only snow on the peak during the winter. There is a permanent crater lake, called Ojos del Salado, about 100 meters in diameter (330 feet) on the eastern side of the mountain close to the top. At 6,390 meters (20,960 feet) high, it is the highest lake of any kind in the world. The mountain is popular with climbers because the ascent mostly requires hiking, except for the final section to the summit which may require ropes.

el Parque Nacional Lauca,

A

in the far north of Chile, which is also part of the Andes. The park covers 1,379 kilometers of highlands, or altiplano, and mountains, which are made up of enormous volcanoes. To the south, you can find Las Vicuñas National Reserve and el Salar de Surire Natural Monument, which, together with el Parque Nacional Lauca, make up the Lauca Biosphere Reserve.

los Torres del Paine National Park

Mountain climbers also come from all over the world to enjoy los Torres del Paine National Park in southern Chilean Patagonia. There they find mountains, glaciers, lakes, and rivers within a beautiful park. The central element of the park is la Cordillera, or “mountain range” del Paine. On one side of the range are the Magellanic subpolar forests, and the other side displays los Patagonian Steppes. The park is located 112 kilometer (70 miles) north of the town of Puerto Natales. The park is one of the largest and most visited in all of Chile, and it is part of the Sistema Nacional de Áreas Silvestres Protegidas del Estado de Chile, or the National System of Protected Forested Areas of Chile. It is definitely a place that should be on every nature lover’s and mountain climber’s itinerary in Chile.

Chile’s Andes contain a large amount of volcanoes.

In fact, there are close to 500 volcanoes in Chile, 123 of which are active. To add to the list, the Osorno volcán is a conical volcano that is 2,652 meters (8,701 feet) located in the Los Lagos Region of Chile. Because of its statuesque beauty, it is known around the world as a symbol of the local landscape. Osorno is one of the most active volcanoes of the southern Chilean Andes— it has erupted 11 times between 1575 and 1869, but not since then.

  • As the name suggests, queso crema con mermelada de mango is a serving of cream cheese and mango (or other fruit) preserves or marmalade.
  • Dulce de guayaba, or guava jelly, is a Colombian spreadable sweet. It is known by other names depending on the country: in España and Argentina, it is called dulce de membrillo, and in Venezuela, it is called bocadillo de guayaba. The jelly has a firm consistency and comes in a rectangular bar or a round that is cut or sliced with a knife and is often served with cheese.
  • Capirotada is a dessert that comes from México and, similar to bread pudding, is usually eaten during Lent, especially on Good Friday. While there are variations to the recipe, the dessert is generally made from a type of bread, called bolillo, that is similar to the French baguette. It is soaked in mulled syrup made from whole cane sugar, clove, and cinnamon sticks. Some people like to include additional ingredients like nuts, seeds, and dried or fresh fruit. In addition, aged cheese is sometimes added to the dish.
  • Pan de plátano is a sweet bread made from plantains, similar to the American banana bread. It often contains nuts and raisins, similar to the American date and nut bread.
  • Although camotes are not a dessert themselves, these tubers, similar to yams or sweet potatoes, are often prepared with cane sugar syrup to make a dessert. For example, in México, dulce poblano de camotes is made with camotes cooked in the oven with sugar, butter, cinnamon, thick cream, orange peel, and raisins.
  • Dulce de leche is a common South American dessert made with slowly-heated sweetened milk. It is most common in México, Paraguay, Perú , Argentina, Chile, Uruguay, Brazil, Colombia, Bolivia, and Venezuela, although in Colombia and Venezuela, it is known as arequipe. In México, a similar dessert known as cajeta is made from goat’s milk. And in la República Dominicana, dulce de leche is made with equal parts milk and sugar with cinnamon, and the texture is more like fudge than milk. You can even find dulce de leche made with unsweetened coconut milk in Puerto Rico.
  • Alfajores are soft, delicate cookies from South America that are made from cornstarch, which gives the dessert a smooth, satiny texture and produces tender, crumbly cookies. While the cookies themselves are delicious, a pair of alfajores would not be complete without a generous helping of dulce de leche to hold the two cookies together. After the cookies are filled with the sweet caramel-like milk, the edges can be rolled in coconut or covered with chocolate.
  • Pastel de tres leches, or three milk cake is a Méxican dessert. As its name implies, it is made with three types of milk. A sponge cake is soaked in sweetened condensed milk, evaporated milk, and then cream. It is often topped with whipped cream and fruit as well.
