It was established at the Passover
This is symbolic because it was the night before Jesus was crucified and the old meal for Passover included unleavened bread and a lamb Sacrifice to God so his wrath would Passover those at the meal. Christ is the “Lamb of God” and he have us himself to spare us from God’s wrath.
Is the Eucharist the same sacrifice as Jesus’ sacrifice on the cross?
The Eucharist is one in the same with Jesus’ sacrifice on the cross because the sacrifice is represented at every mass

The sacrifice of the Priest Melchizedech, who offered bread and wine to God, foreshadows the Eucharist. It’s this sacrifice because bread and wine are the key to the Eucharistic celebration.
