As temperature rises past optimal, the hydrogen bonds and other bonds in the active site of the enzyme begin to change shape, leading to the substrate fitting less easily in the enzyme causing a decrease in rate of reaction

How does a high temperature affect rate of enzyme action

A

At high temperatures the enzyme bonds in the active site break cause it to become denatured. This is a permanent change and means the enzyme - substrate complex cannot be formed, stopping the reaction.
