What is the lock and key theory?

A

How does amylase break down starch?

A

The substrate (starch) binds to the active site of the amylase because the active site is complementary to the substrate (starch). Then, the bonds between the sugar molecules are broken, so the substrate (starch) is smaller and soluble, and is then expelled from the active site.
