It’s the method of how enzymes work. The substrate of the reaction to he catalysed fits into the active site, is split into products which leave the site, then the active site is ready to be used again.

How does amylase break down starch?
The substrate (starch) binds to the active site of the amylase because the active site is complementary to the substrate (starch). Then, the bonds between the sugar molecules are broken, so the substrate (starch) is smaller and soluble, and is then expelled from the active site.
