What are HDLs?
high density lipoproteins; picks up cholesterol from cells to remove via the liver
Where are chylomicrons made?
small intestine
Where are VLDL cholesterol made?
liver
Where are LDL cholesterol made?
remnants of VLDL that forms in the blood and loses its triglyceride content
Where is HDL cholesterol made?
liver (small amount in small intestine)
What is lechithin?
phospholipid; used as an emulsifier in salad dressing to keep the fats and water from separating
What is rancidity?
occurs when double bonds in unsaturated fats begin to break down due to prolonged exposure to light and oxygen
What is considered good and what is bad cholesterol?
HDL is good, LDL is bad
What is atheroslcerosis?
plaque formation in the arteries that prohibits proper blood flow trhough the arteries resulting in high blood pressure and potential for heart attack and stroke
How can we lower our LDL?
through a diet low in saturated fat, trans fat, and cholesterol but high in fiber and omega-3
What are metabolic syndromes/syndrome X?
cluster of symptoms that include excessive amount of abdominal fat, high blood glucose levels, high triglycerides, low HDL cholesterol, and hypertension
What does the American Heart Association recommend for fat consumption?
nore more than 30% of calories from fat
What does the Food and Nutrition Board recommend for fat consumption?
no more than 35% of calories from fat
no more than 7% of calories from saturated fat
less than 1% of calories from trans fat
cholesterol intake less than 300 mg
