What are essential amino acids? How many?
nine; must consume in our diet and our bodies cannot naturally synthesize them
What are nonessential amino acids? How many?
11; body can manufacture, derive, or convert them from existing matter
How are amino acids held together?
peptide bonds
What determines the function of proteins?
shape/folding
What is denaturation?
process of disrupting and destroying a protein’s structure
What can cause denaturation?
heat
enzymes
acid

When does digestion of proteins begin?
cooking will denature proteins
What is pepsin?
enzymes produced by the stomach that further denatures the protein in the stomach
What is gastrin?
released when we think about eating food, activates pepsin when released
Where is gastrin and pepsin released?
stomach
What is CCK?
cholecystokinin; released in small intestine, travels to pancreas, and causes the release of trpysin
What is trypsin?
enzyme that braeks the chain of amino acids into smaller units
