Beer Flashcards
What is the sugary rich liquid derived from malty grains to make beer called
Wort
What are the 4 key ingredients to a Beer
Water, Yeast, Hops and a starch source
What are hops
Dried flower structures that provide bitterness and flavour to Beer
What is the reason for adding hops to beers, beyond taste
Hops act as preservative and have antiseptic, anti bacterial qualities
When was Bavarian Purity law (Reinheitsgebot) established
1516
What were the three ingredients proscribed in Reinheitsgebot
Barley, Water and Hops
Which enzyme coverts the starch to sugar during malting
Amylase
What does amylase breaks the starch into
Fermentable sugars - Maltose and Dextrin
How do you suppress further growth in Green Malt
By drying and roasting using hot air
What determines the degree of roasting in Beer Malt
The style desired for the finished beer; light for Pale Ale, highly roasted black malt for porter
What is the name given to the milled ground malt
Grist
What is the name of tank where grist is combined with hot water
Mash Tun
What is the name of the liquid produced by drawing off from solids from the mash tun
Wort
What is Sparging
Risnsing the spent grains used to make wort with fresh water, to draw out flavours and sugars still left
Why is sparging not extensively used
It may cause unwanted bitterness in the finished brew
Why is the wort boiled for over an hour
To stabilise and sterilize, darken the colour and reduce excess water. Also extract bitterness from hops
What is hopback chamber
The wort is passed through hopback chamber after boiling to regain hop flavours lost during excessive boiling
Which wort is cooled to a lower temperature, Lager or Ale
Lager wort is cooled to lower temperature
What is the name of the yeast used for Ales
Saccharomyces cerevisiae - top fermenting yeast
What is the name of bottom fermenting yeast in a Lager
Saccharomyces pastorianus
