The vines are planted at the food of Mount Ventoux where the soils are predominently clay and stony limestone. The grapes spend 7 days macerating in concrete vat with repeated gentle pumping, with fermentation occurring in concrete and stainless steel for 30 days. Aged for 18 months and filtered. 15% Alc
