2009: Richard: Chardonnay-Savagnin “Blanc Tradition”

A

Hand-harvested and selected grapes, varietals aged separately 48 months in oak barrels and blended at the end. The Savagnin is aged “sous voile”, meaning the barrels are not topped off so evaporation can take place allowing for a layer of yeast to develop on the surface. 13.5% Alc

NV: Richard: Cremant de Jura, Blanc Brut

A

From vines grown on predominantly clay and limestone soils, hand-harvested with severe sorting in the vineyard. Fermentation takes place in stainless steel tanks with blending and bottling occurring the following harvest. Aged between 24-36 months on lees before bottling and disgorgement. 12% Alc

A

From 40 year-old vines planted on grey and blue marl soils, always hand-harvested and highly selective for the ripest grapes. Classical white wine making process followed by six years-and-three months of being aged “sous voile” in oak barrels - the barrels are not topped up, allowing a layer of yeast to develop protecting it from oxidation. 13.5% Alc

From vines averaging 40 years old, planted on gray and blue marl soils over clay-limestone deposits. Hand-harvested in September with severe sorting in the vineyard followed by 21 day fermentation. Filtered after five years resting in cellar. 13.5% Alc
