From vines ranging in age between 10-30 years, planted on gravelly sandy soils and hand-harvested in October. The grapes spend 10-15 days on the skins, de-stemmed, and undergoes spontaneous fermentation for 30 days with no temperature control and spending no time on lees. Aged for six months in cement with light filtration. 13% Alc
2013: Lambert: Chinon, “Les Perruches”
From vines ranging in age between 20-50 years old planted to 3ha of caly and flint soils. The grapes are hand-harvested in October, undergo table sorting, de-stemming, and then 30 days of maceration and spontaneous fermentation in 120hl cement vats with no temperature control. Aged in 50hl trunconic vats for 18 months. Not Filtered.
2011: Lambert: Chinon, “Les Puits Danaé”
From vines averaging between 15-25 years grown on clay and limestone from Les Puys de Rochette plot as well as a few small plots at Cravant-les-Coteaux. Hand-harvested followed by a 30-40 day maceration period in wood or concrete vats with manual punch-down. Aged for 24 months in 600L oak barrels (20% new) and then another 5-6 moths in concrete vat. Not filtered or fined. Certified Organic.
