2015: Payral: Bergerac Blanc Sec
40% Sauvignon Blanc, 40% Semillon, 20% Muscadelle
The vines age around 20 years-old and come from 2.5ha. Harvested separately in mid-September between the 12th and 22nd, followed by 24 hour maceration period before a one month spontaneous fermentation, and then aged on the lees for up to 8 months with one battonage each month. Filtered before bottling. 12.5% Alc

2014: Payral: Bergerac Rouge
60% Cabernet Franc, 40% Merlot
From vines aged around 25 years old planted on 4ha of calcareous clay-limestone soils. Harvested, destemmed and undergo a 15 day spontaneous fermentation with indigenous yeasts and then left to age in tank for 20 months. Filtered. 12.5% Alc

2005: Payral: Saussignac (12 x 500ml)
60% Sémillon, 25% Muscadelle, 15% Sauvignon Blanc
At Château le Payral, their small production of Saussignac is a source of pride. Grapes from the oldest vines grown in sandy, silty clay soils, giving the lowest yield of just 15 hectoliters per hectare. Botrytis Cinerea permits the concentration of the grapes, which are then picked and sorted meticulously by hand. After sorting, the grapes are pressed and the wine is moved to large neutral oak barrels for fermentation and ageing for 24 months. Only 5,000 bottles produced.

2010: Payral: Côtes de Bergerac, ‘Cuvée Héritage’
Preceded by the Cuvee Paul in 1998 and the Cuvee Emilien in 2000, the cuvee Heritage became since the 2001 vintage the finest jewel of our property in red. Coming from a very scrupulous choice of the best grapes of the property (planted on sandy-clay-silt-limestone soils), this cuvee is obtained by a technique only used in our winery since the 2000’s, punching of the cap. The wine is aged in barrels, renewed by thirds each year and only the best of them are blended to obtain this cuvee.
The objective is to elaborate a cuvee which is at once concentrated and fleshy in taste.., a harmony between the aromas of mature fruit and the woody notes of the barrel. This cuvee presents an excellent potential for ageing. According to the vintage, some cuvees are made and aged without sulphites. 13% Alc
