2015: Gouley: Petit Chablis
From 35 year old vines planted to 7ha on calcareous clay soils. Harvested in mid-September followed by spontaneous fermentation in stainless steel tanks for 10 days and then allowed to rest on the lees for four months. Aged in stainless steel tank and filtered. Certified Organic. 12.5% Alc
2014: Gouley: Chablis 1er Cru, “Fourchaume”
60 year old vines planted to 1.5ha on calcareous clay soils. Harvested mid-September followed by spontaneous fermentation in stainless steel tanks with native yeasts lasting 15 days. Allowed to rest on the lees for one year. Aged in stainless steel tanks for 18 months and filtered. Certified Organic. 12.6% Alc
2014: Gouley: Chablis 1er Cru, “Mont Milieu”
From 48 year old vines planted to a single parcel of 1ha of clay-limestone soils. Harvested in early September, followed by one hour on the skins and spontaneous fermentation with indigenous yeasts between 8-15 days. Allowed to rest on lees for six months with no batonnage. Aged between 9-12 months in stainless steel and filtered. Certified Organic. 12.7% Alc
