NV: Etienne: Champagne Brut, “Cuvée Tradition”
75% Pinot Noir, 25% Chardonnay.
From an assemblage of 2009 and 2010. The vines are more than 25 years old and are planted on shallow clay/limestone bedrock in the villages of Meurville, Arrentieres, and Couvigonin the Aube. The fermentation lasts about 12 days under temperature control. Resting on lees until disgorgement, with a minimum of three years. Dosage 8 grams. Practicing Organic. 12% Alc
2010: Etienne: Champagne Brut, “Cuvée Millésime”
From 65% Pinot Noir and 35% Chardonnay, grapes are all hand-picked from the 2010 vintage. The 2010 vintage was exceptional for Chardonnay, the Pinot Noir was reduced but thrived. The Chardonnay is fermented in 3-year old oak barrels and aged for about one year, while the Pinot Noir is fermented in stainless steel tanks. Secondary fermentation begins in the bottle and the wine is left to age and rest for about two years, before disgorgement in October of 2011. A 5.5 gram dosage is added before release.
