What are the functions of Vitamin B12?
Involved with folic acid + iron to make RBCs. Metabolism of fatty acids to produce energy. Helps metabolism of folic acid, stops spina bifida. Maintains myelin sheath - allows nerve impulses.
What are the deficiencies associated with Vitamin B12?
Pernicious anemia: Eyes turn yellow, fatigue + tired. Fatty acid not broken down to release energy = tired. Increase in NTDs - spina bifida. Myelin sheath damaged so slowed nerve impulses.
What are the properties of Vitamin B12?
Water soluble. Destroyed by light. Heat stable - some loss during cooking.
