  • may be released on January 1 of the seventh year following the harvest
  • Château Chalon: min 12%
  • Côtes du Jura/Arbois/l’Etoile: min 10.5%
  • Aging includes min 60 months ’sous voile’ — a yeast blanquet (voile) develops on top of the wine and protects it against oxidation.
  • The voile may take 2-3 years to fully develop, which is why the wines show a degree (but not total) of oxidation
  • Not fortified
  • May be declassified to Côtes du Jura AOP for poor vintage — 1974, 1980, 1984, 2001
