A

Max of 80%

17
Q

What are the 2 types of disgorgement? Which one uses the force of internal pressure to expel the semi-frozen sediment?

A
  • A la Glace

- A la Volee is the older technique where without freezing the sediment, excess wine is invariably lost along with it

18
Q

What is jetting?

A

A 3rd technique of disgorgement. New procedure to regulate the oxidation that occurs through the shock of disgorgement
⁃ in order to minimize the amount of air in the bottle, a tiny droplet of water or wine is added just before the cork is inserted
⁃ causes the CO2 on the surface of the wine to foam up and expel the air
⁃ cork is then put into the bottle, compresses the CO2 without any air
