Buying canned food
Avoid bulging, dented or rusting cand, contents may contain food poisoning.
Read label - check contents. Fruit may be canned in syrup/fruit juice.
Fish in oil, brine (salty water), sauce.
Check expiry date.
Drying
Heat removes water. Prevents micro-organism growing bc cannot live w/o moisture.

Packaging intact
Check expiry date
Irradiation
Energy waves passed through food. Micro-organisms killed. Food keeps for long time.
Vitamins reduced.
Controversy as manufacturers may be disguising stale food as fresh

Shows food stuff has been irradiated.
Canning
Heat destroys micro-organisms. Food kept in airtight sterilised cans to prevent further contamination.
Frozen food - food value, appearance, flavour, texture
Food value - do not lose vit + min content
Appearance - Do not lose colour, esp if blanched nevofe
Flavour - Retained
Texture - Do not become too soft
