How is soju traditionally made?

A

Made by distilling alcohol from fermented grains. Rice wine for distilled soju is fermented for about 15 days. This was produced this way until 1965 when it was banned by the government to alleviate rice shortages. It was then created using highly distilled ethanol from sweet potatoes and tapioca, and flavored and sweetened. Prohibition was lifted in 1999 but cheap soju is still made this way. There is a trend for diluted soju and popular is the 17% ABV styles
