Lipids (Fats and Oils) Flashcards
what are the elements lipids have
the same as carbs. carbon, hydrogen, and oxygen
what is the proportion of oxygen in a lipid like
much less than in carbs EX. a fat in beef and lamb (tristearin) has a formula of ( C51 H98 O6)
like other animal fat when is tristearin a solid and when is it a liquid
it is a solid at room temp but it melts if it is warmed
when are plant lipids liquid
usually at room temp they are called oils
what things are rich in animal fat
meat, butter, cheese, milk, eggs, oily fish, and things fried in animal fat
what types of vegetable oils are used in the kitchen
olive oil, corn oil, rapeseed oil, as well as things made with oil (margarine)
what percentage of our body mass is lipids
10%
do lipids play an important role in the structure of our cells
yes
what are so the ways lipids are used in the body
1 it is deposited around the body (long term energy store)
2 fat is deposited under the skin around the heart and kidneys for example. that fat is used as insulation which reduces heat loss throughout the surface of the body
3 fat around the organs protects them from mechanical damage
what are the 2 molecules that make up lipids
glycerol and fatty acids
how are lipids made
glycerol an oily liquid which is use in cosmetics, joins to 3 fatty acid molecules to make lipids
why do we have so many different types of lipids
because there are many different types of fatty acids giving us many types of lipids
are lipids essential to the diet
yes
can we have as much lipids as we want
no. too much is bad esp. saturated fat and cholesterol which is linked to heart disease
what are saturated fats
they are lipids with no double bonds that are mainly from animal sources (meat and dairy)
