What is Vin Jaune?
Savagnin grown on limestone or marl is kept in barrel after fermentation until December 15th six years after harvest. The wine is never topped off and a voile (veil) develops. The wine becomes aldehydic with a nutty, floral, dry, delicate profile. Wines are unfortified.
What is Vin de Paille?
“Straw Wine” which is ripe but unbotrycized is left to dry on straw mats or hung for minimum six weeks after harvest. Grapes must achieve a must weight of 320g/l. There is significant residual sugar but plenty of acidity to balance as well as minimum 14% alcohol. After fermentation wines spend 3 years in barrel. 18 months neutral.
