Other Facts: American Sommelier Bobby Stuckey and Chef Lachlan Patterson of Frasca Food and Wine (arguably one of Boulder, Colorado’s best restaurants) got together to collaborate on a pinot grigio project in Friuli that was flavorful enough, packing enough body and acidic backbone to pair with their favorite foods.

Other Facts: Müller-Thurgau is a white grape variety (sp. Vitis vinifera) which was created by Hermann Müller from the Swiss Canton of Thurgau. His intention was to combine the intensity and complexity of the Riesling grape with the ability to ripen earlier in the season that the Silvaner grape possesses.

Other Facts: Founded seven generations ago, this winery was repeatedly handed down from father to son. In 1990, at the age of 22, Veronique Barthe, the first girl in the family since the French Revolution, inherited the family estate and as its first female oenologist and winemaker is proving her worth by winning numerous awards for her estate wines with a screw cap closure.

Other Facts: Spätlese literal meaning: “late harvest is a German wine term for a wine from fully ripe grapes, the lightest of the late harvest wines. Late harvest grapes are often more similar to raisins, but have been naturally dehydrated while on the vine.

Wet stone, apples, pears and sweet berries.

Other Facts: Txakoli pronounced Cha-Ko-Lee, is a slightly sparkling, very dry white wine with high acidity and low alcohol content produced in the Spanish provinces of the Basque Country. It is normally served as an aperitif and drunk within one year of bottling as it cannot be stored for longer. We are one of the only restaurants pouring it from the tap!!!!!!!

Other Facts: By far the most high quality red Greek grape varietal, see-no-mah-vro as it is phonetically spelled, has a rewarding depth and complexity. Kir Yianni is also deeply respected as a top Greek Winery working in two primary regions. Who doesn’t love pink bubbles?

Other Facts: Domaine Skouras is one of the original pioneers of quality in Greece. The grapes are grown on high altitude (3,400ft) in the Nemea region, birthplace of St, George. Translated the name of the grape is Arghioghitiko.

Other Facts: Olivier Berard’s family has been making wine around the village of Perreon for over 400 years. In fact since Perreon is Olivier’s mother’s maiden name it’s unclear whether this wine is an homage to the local terroir or to his ever patient mother (I’m betting he told his mom it was for her…).

Other Facts: The reds in Chinon are made from Cabernet Franc, with an allowance of 10% Cabernet Sauvignon. They are typically dry and light to medium bodied and go well with food.

Other Facts: Locations is a project to travel the world and make wine from various countries. Their French red wine was sourced from some of the finest locations throughout France. Grenache from the Roussillon, Syrah from the Rhone, and assorted Bordeaux varietals have been sensibly blended in an original style that showcases the best of what this historic land has to offer.

Sake

A

Japanese rice wine made by fermenting rice that has been polished. Unlike wine, in which alcohol is produced by fermenting sugar that is naturally present in grapes, sake is produced by a brewing process more like that of beer, where the starch is converted into sugars, before being converted to alcohol. Rice is milled or “polished” before being used in brewing to eliminate the fats, proteins, and minerals on the outer portions of the grain that can inhibit fermentation.. In general, the more the rice has been polished, the more refined and elegant the saké’s flavor profile will be.

Kikusui Funaguchi Honjozo (Can) (15)

A

Style: Honjozo. This style has a small amount of brewer’s alcohol added to the fermenting sake mash. Sake brewers discovered that certain aroma and flavor properties were much more vibrant when a small amount of alcohol is added. Honjozos can maintain quality longer both before and after opening the bottle.

19% Alcohol
Sweet, Rich and Unpasteurized. A full bodied sake. Pairs well with rich and spicy dishes. Being un-pasteurized and undiluted allows you to enjoy the fruity aroma and fresh full bodied flavor of this Sake. Made with very soft water from the Kaji River.

Oh Mine Junmai Daiginjo Sake (cup) (15)

50% Rice Polished
Style: Junmai Daiginjo. Daiginjo, which literally means “big ginjo,” is often the most prized bottling of the sake brewery, representing the height of the brewmaster’s ability. A minimum of 50% of the outer rice layers must be polished away to classify a sake as daiginjo. This is the Highest Grade Sake.
Sweet and rich aromas of white peaches. Created with “Benten water” also known as “Water for Gods”.
The Japenese Government served Oh Mine sake to various world leaders at the World Economic Forum in 2013 in Davos, Switzerland.

Kiku-Mamsamune Taru Sake (cup) (12)

70% Rice Polished
Style: Junmai. Milled to 70%. Junmai sakes tend to be full bodied, with pronounced earthiness and rice-influenced flavors. While rich in impact and overall depth, junmai sakes do not tend to be as fragrant as other styles. Junmai goes great with less delicate food like grilled or smoked items.
13-14% Alcohol
This junmai sake is stored in high quality cedar casks for storage before bottling. As a result there is fresh aromas of Japanese cedar. Crisp and Dry.
