Tequila
A spirit distilled from blue agave. It is a regionally specific name and can only be produced and sold as tequila if it comes from the Mexican state of Jalisco(and a select few other municipalities). The harvested agave is distilled twice to produce a ‘silver’ tequila. Reposado tequila is aged in oak barrels for at least two months, but less than one year. Anejo tequila is aged for at least one year, and no longer than three years.
Tequila is technically a subset of mezcal. However, what we know as mezcal in the U.S. (tequila’s smokier cousin) is primarily produced in Oaxaca, Mexico.
