Octopus, lettuce cup, sweet chili sauce, pickled fennel
Octopus braised in cort bouillon, then charred on the grill. Topped w. pickled fennel (rice vinegar) sweet chili sauce (fennel seeds, dried chilies, garlic, simple syrup and corn starch). Everything is placed inside a butter lettuce cup and topped with chopped peanuts.

Avocado, roasted garlic aioli, pickled carrot and daikon, jalapeno, garlic bread
(House version bahn mi). Grilled avocado topped w. pickled carrot, daikon and fresh jalapenos. Drizzled with aioli (mayo, roasted garlic, soy sauce, sugar, vinegar). Served w. a garlic butter baguette. Garnished w. cilantro and soy pickled cucumbers (soy sauce, rice vinegar, sugar).

Japanese eggplant, fish sauce caramel, thai basil
Japanese eggplant grilled and sliced. Topped w. fish sauce caramel (sugar cooked w. dark caramel, seasoned with fish sauce). Garnished w. fresh thai basil and garlic and shiitake crumble (flour, butter, sugar, dried shiitake powder, and garlic).

Beef tongue, pickled mustard and caraway seed, kimchi aioli
Beef tongue braised with mirepoix until tender. Grilled, cooled, thinly sliced. Topped w. kimchi aioli (chopped kimchi, garlic, and mayo). Garnished with pickled mustard seeds, caraway seeds, and cilantro.
