A
a fortified wine made from white grapes in Andalusia, Spain. There are several varieties of sherry, the three primary types are fino, amontillado, and oloroso. In order they go from light to dark in coloration. The color comes from exposing the sherry to oxygen and allowing it to oxidize. The oxidation also produces a richer spirit.
