How stable is Niacin in foods and what forms does it take?
A
Niacin is fairly stable in foods, found as NAD and NADP in animal foods, and mainly as nicotinic acid in plant foods.

A
Assists in metabolism of carbohydrates and fatty acids, plays a role in DNA replication and repair, and cell differentiation.
