Amarone della Valpolicella DOCG
- Corvina, Rondinella with accessories of Molinara, Oseleta and Negrara. These are dried on Graticci (Racks) in Fruttai (lofts for grape drying)
- The wines spend 2yrs in barrel before release and riservas are 4yrs.
- Within the Classico subzones are 5 districts: San Pietro in Cariano, Negrar, Marano, Fumane, Sant Ambrogio
- Valpolicella Ripasso is 12.5% min alc. Valpolicella Ripasso Superiore is 13%
Soave DOC
Within Soave DOC there is Soave Superiore DOCG and Recioto di Soave DOCG. 70% Gargenega min with Trebbiano di Soave and Chardonnay. Recioto di Soave are grapes dried 4 to 6 mths. Soave Superiore must be aged 6 mths and 1yr for Riserva. The Classico zone is : Soave and Monteforte d’Alpone
Gambellara DOC
- Gargenega grape same as Soave but in a higher 80% min. Recioto di Gambellara DOCG is 100% dried Gargenega.
- Breganze DOC make international varieties and is famous for Breganze Torcolato – A passito wine made from Vespaiolo.

& Asolo Prosecco DOCG
- Glera grape is the main. The best area is arguably the hills of Cartizze.107ha of 8000ha. Labelled as Valdobbiadene Superiore di Cartizze. It is generally dry with 17-35 g of RS. Rive is single vineyard. Got 43 of them.
- Prosecco Col Fondo is a refermented Prosecco in bottle but not disgorged (cloudy and funky)
- Friularo di Bagnoli DOCG is Raboso Piave still and Passito
- Piave Malanotte DOCG is Appassimento from Raboso Piave
- Colli Euganei Fior d’Arancio DOCG is dry, sparkling, passito from Moscato Giallo.

- Chianti DOCG is min 70% Sangiovese with not more than 15% Cab S whilst Chianti Classico is min 80% Sangiovese.
- Chianti DOCG requires 1yr aging whilst Riserva requires 2yrs.
Chianti Classico DOCG is 2yrs and 3mths bottle for Riserva and 2.5yrs and 3mths bottle for Gran Selezione.
Vino Nobile di Montepulciano DOCG
Prugnolo Gentile(Sangiovese) is the main grape at 70% the rest can be maximum 30% other Tuscan varieties with no more than 5% white grapes. The wines must be aged for 2yrs whilst Riserva must be 3yrs.
Brunello di Montalcino DOCG
- Brunello – Min 2 years in wood plus 4 months in bottle, total ageing 5 yrs.
- Brunello Riserva – Min 2 years in wood plus 6 months in bottle, total ageing 6 yrs.
Morellino di Scansano DOCG &

- Morellino di Scansano DOCG – 85% Sangiovese aged minimum 2yrs for Riserva

Super Tuscans
Started off with Sassicaia and Tignanello in 1971.1992 the region was given IGT status. 1983 Bolgheri was given DOC status. In 2013 Bolgheri Sassicaia (Min 80% CabS) became its own DOC status. Bolgheri DOC can use pure or mix international varietals with 2yrs of aging (1 in oak)

The Sweet Wines of Tuscany
1. Elba Aleatico Passito DOCG is an island off the coast making red passito wines from Aleatico.
2. Vin Santo del Chianti DOCG is made from Trebbiano and Malvasia. A rose version “Orcchio di Pernice” is made by adding 50% Sangiovese. Traditionally aged in Chestnut oak.
