Hungry
Tokaj
- 2 main rivers: Tizsa and Bodrog rivers that meet and form perfect conditions
- Svarzas (Deer Hill) and Mezes Maly (Honey Pot) as Great First growths among 74 vineyards
- Aszu grapes were hand harvested, held in Puttony (baskets) that are 25kg, and put into 136L Goncs. Permitted grapes are: Furmint, Harlesvelu, Sagarmuskatoly, Zeta, Kabar, Koverzsolo
- In 2013, Modern Tokaji eliminated the Puttonyos system. Now, it is aged 18mths in barrel before being released after a total of 2yrs. It must contain 120g/L of RS with at least 9% alcohol.
- Producers may still use the phrase “6 Puttonyos” to signify an Aszú wine with 150+ grams/liter of residual sugar. Wines between 120–150 grams/liter of sugar are now labeled as Tokaji Aszú.
- Esszencia is from a fraction of the 1st batch of fruit, free run juice is slow fermented (decades) to form a wine that is 450g/L of RS
- Szamorodni(as it comes) is a combination of Aszu (dried) and fresh/healthy berries and is usually made into a slightly oxidative style of wine after maturing for 6 mths. It can be edes (sweet) or szaras (dry).
- Forditas and Maslas are wines that are made by refermenting wine with the pressed paste and lees from Tokaji Aszu

Upper Hungary: Eger PDO
Eger PDO
* use “Bikaver” on their labels for Egri Bikaver (Bulls Blood) – main grape is Kekfrankos (Blaufränkisch). A minimum of 4 grape varieties (Cab S, Cab Franc, Merlot, Syrah…) must be used, with Kekfrankos – comprising 30-65% of the blend
* Classicus is 6mths aging in oak whilst Superior and Grand Superior is 12mths with GS having smaller yields at 35hl/ha compared to 60hl/ha for Superior.
Upper Hungary: Matra PDO & Egri Csillag

Matra PDO – second largest PDO in the North
White – Irsai Oliver, Muskatoly Ottonel and Sarga Muskatoly
Red – Kekfrankos and Kadarka - Egri Csillag (meaning Star) is a white wine made like Bikaver from a blend of min 4 varieties from Olasz Riesling, Furmint, Harlesvelu, Irsai Oliver and Mezes. Three styles are made: Classic, Superior and Grand Superior. No rules just must taste more complex.
Upper Pannon
Sopron PDO is the only PDO with predominantly red grapes. Kekfrankos dominates followed by Zweigelt and Cab S. Its next to Austria and somewhat a continuation of Leithaberg.
Pannon
- Villany PDO – Bordeaux blends together with Kekfrankos
- Szekszard PDO – Szekzardi Bikaver (the only other PDO allowed to make Bikaver), it is 45% min Kekfrankos and 5-10% Kadarka

Balaton
Badacsony PDO, Balatonfured-Csopak PDO and Somlo PDO are famous for white wines made from Furmint, Jurfark and Olaszriesling -
Danube
Kunsag PDO is the largest region in Hungary and produces most of Hungary’s low cost wines.
Bulgaria
- Danubian Plains PGI: The Danube river runs through this area.
- Thracian Lowlands PGI: Part of the Zapadni Rodopi Mountains
- Cab S and Merlot account for over 50% of the Reds planted.
Local grapes are Melnik 55 (hybrid of Valdeguie and Melnik), Pamid (Rosioara in Romania) and Gamza (Kadarka) and Mavrud. Rubin is a crossing of Nebbiolo and Syrah.
Romania
- The most common native white grapes – Feteasca Alba and Feteasca Regala
- The most common native red grapes – Feteasca Negra, Burgund Mare

Transylvanian Plateau
Tarnave DOC is the coolest wine region for native whites with Jidvei DOC located within producing high acid wines. -
Moldovan Hills
Cotnari DOC the most famous sweet wine from Grasa, Feteasca Alba and Tamaioasa Romaneasca -
Multenia-Oltenia
Dealu Mare DOC in Multenia-Oltenia is good for Cab S and Pinot Noir. -
Drogbea
Murfatlar DOC in Dobrogea was famous for late harvest Chardonnay, now also Cab S and PN
Slovenia
- The western region of Primorska (Coastal Land) borders Friuli in Italy – major varietals – Rebula, Reforsk, Sivi Pinot (Pinot Grigio)
- Podravje (Drava River Basin) is the largest region in Slovenia. Laksi Riesling (Welschriesling) is the largest plantings followed by Diseci Traminer (Gewurztraminer) and Renski Riesling (Riesling).
- Posavje (Sava Valley) borders Croatia inland. 3 regions: Bizeljsko Sremic is famous for Sparkling, Bela Krajin (sweet Rumeni Muscat) and Doljenska (Cvicek – a blend of white and red), low abv 8.5% - 10%.
Croatia
- Dalmatia – Famous PDOs are Dingac – Plavac Mali (a powerful red) – and Zagora PDO
- Croatian Uplands has the Plesvica PDO and Moslavina PDO
Slovakia
Slovakia has 6 regions: Male Karpaty Hills (Small Carpathian), Southern Slovakia, Central Slovakia, Eastern Slovakia, Nitra and Tokaj
* Male Karpaty Hills is the most important region. Silvaner, Veltliner, Welschriesling and Riesling are the main grapes.
