What is vin jaune? How is it made?
A deliberatly oxidative wine flavored with yeast. Produced from Savagnin grown on limestone and marl. Deliberatly oxidized. Kept in barrel until December 15 of the sixth year following harvest. A voile (film made of yeast that covers the top of the wine) forms and imparts aldehylic and nutty flavors.
