Food: Lipids Flashcards
Lipids
Fats: solid at room temperature and extracted from animals
Oil: liquid at room temperature and extracted from plants
Elements in lipids
(C) Carbon (H) Hydrogen (O) Oxygen No fixed ratio Very little oxygen
Structure of triglyceride
1 fatty acid 1 G L Y C fatty acid 2 E R O L fatty acid 3
Phospholipid definition
Fat like substances in which one of the fatty acids are replaced with a phosphate group or has a phosphate group added to it
Role of lipids (Structurally)
Cell membranes contain phospholipids
Stored uner the skin for insulation
Protection of delcicate organ e.g kidney
Myelin sheath - layer of fat surrounded by nerve cell to speed up nerve transmissions
Role of lipids (metabolism)
Long term energy store - they can be converted to carbohydrates to release energy in respiration
Each gram of fat contains twice as much energy as 1 gram of carbohydrates
Source of lipids
Dairy Fish Fried food Meat Butter Oil
