Factors Effecting Enzyme Action Flashcards
What affects affects an enzyme
Temperature and pH
Temperature
1) High temperature starts to break the bonds holding the enzymes together
2) The active site starts to change shape
3) If it changes shape too much then it will become denatured (and so the enzyme won’t be able to bond with the substrate)
What is the optimum temperature
This is where the rate of reaction is the highest
pH
Is the measure of acidity
1) some of the bonds holding together start to break
2) The active sight starts to change shape (but the substrate can still fit in but not as well this causes a decrease in rate of reaction)
3) If the active sight changes too much then it will be ‘denatured’
Optimum pH
Is where the rate of reaction happens best with a pH
Optimum pH of a stomach is 2
