Rap: Finely chopped fresh spinach in a decadent smoked bacon cream sauce with a trio cheeses.

Bacon cream sauce is made in house, and included shallots, garlic, roux (butter / flour), White wine, chicken stock, and heavy cream
Spinach goes through a grinder, which leads to less stringy pieces

Rap: A perfect balance of corn on the cob and creamed corn.
Fresh corn sauteed with butter, shallots, and white wine, with cream, salt, sugar added to taste. Sauce reduced to coat corn, Creamy Dreamy added (1/2 cream / 1/2 butter). Flash sauteed to before serving.

Parmesan Truffle Fries
40 ct. potatoes are soaked in water for a day to remove starch, which makes a crispier fry. Blanched in oil for eight minutes. Final cook to order.
Tossed in salt/parm/truffle oil in a bowl. More parmesan grated over the top.
Soft on the inside/crispy on the outside
Takes long time to prepare (like mushrooms)
