Sauce on Plate - Sherry Reduction (Sherry and Chx Stock Reduction)
Veggies - Cooked down in a Apple Cider Vinaigrette w/ Butter
Berkshire pork chops - also known as Kurobuta pork - from hogs raised on pasture with no antibiotics, added hormones or growth stimulants.
Rap: A 16 oz. Honey/Herb brined Berkshire Pork Chop, served with a fresh-cut cabbage that’s cooked down in an apple cider vinaigrette with applewood-smoked bacon, marble (new) potatoes, and red onion.
And topped with a mustard caviar that’s been simmered in a apple cider vinegar

3 parts chicken stock
2 parts cab jus
