In plant molecules,
- the glucose that makes up the molecule are slightly different and affect their 3D shape
- starch contains alpha glucose, while cellulose is made of beta glucose
- this makes cellulose indigestible in humans
starch = easy to digest
cellulose = animals cannot digest
sugars = quick energy
starches = longer lasting energy
