2 oz Cachaça 1/2 whole lime quartered 2 heaping barspoons of raw sugar muddle sugar and limes add Cachaça and cracked ice roll several times to help mix and aerate the cocktail pour ingredients into a rocks glass no garnish

Martini
Gin: 2 oz gin 1 oz dry vermouth 2 dashes orange bitters served up with lemon twist
Vodka:
some including Liquor.com and Tom Macy say to have less vermouth in a vodka martini, for example, Tom and Liquor.com agree with upping the vodka by half an ounce and decreasing the vermouth by half an ounce. Liquor.com says only use 1 dash of orange bitters. Tom foregoes the orange bitters entirely as does Ryan. Ryan says no orange bitters and only a rinse of dry vermouth because most customers don’t expect to really taste the dry vermouth.
Classic Dry Martini
Gin: 2 1/2 oz gin 1/2 oz dry vermouth 2 dashes orange bitters served up with lemon twist
Vodka:
2 3/4 oz vodka
1/4 oz dry vermouth

Ryan doesn’t seem to distinguish between a classic dry and extra dry vodka Martini. He doesn’t put vermouth in either, not even a dash or rinse. I think that’s silly. At the very least the extra dry has to stand for something. Tom says for a dry vodka Martini, use 1/4 oz vermouth, no orange bitters, and at least 2 1/2 oz vodka. I’d probably go with 2 3/4 oz vodka to keep it an even 3 oz and I think Jack and Tom would as well.
Extra Dry Martini
Gin: 3 oz gin rinse with dry vermouth 2 dashes orange bitters served up lemon twist
Vodka:
Ryan of course says no vermouth or orange bitters at all, Tom defines “extra dry” as code for pure chilled vodka as well, no bitters or even a rinse of vermouth and not worthy of the name “Martini”.
Dirty Martini
Tom says whether you use less vermouth or not to keep the liquid proportions the same is up to you. He’d probably bring the vermouth down and base spirit up for the vodka but keep at least the base spirit the same for gin. But anyway,
1/4 oz - slightly dirty
½ oz - “classic” dirty
3/4 oz and up - very dirty to filthy
Liquor.com says 2 1/2 oz of gin OR vodka 1/2 oz dry vermouth for both spirits 1/2 oz olive dirt for both spirits and 2-4 olive garnish
so, 2 oz gin 1/2-1 oz dry vermouth 1/2 oz olive dirt served up with two olives
Ryan's standard dirty gin is: 2 oz gin 1 oz dry vermouth 3/4 oz olive dirt and shaken, not stirred
Ryan's standard dirty vodka is: 3 oz vodka 3/4 oz dirt rinse of vermouth shaken, not stirred
slightly dirty: 2 oz gin 3/4-1 oz dry vermouth 1/4 oz olive dirt served up with one olive
very dirty - filthy 2 oz gin 1/4-1 oz dry vermouth 3/4 oz and up olive dirt served up with three olives
Another way is to increase the main spirit in proportion to how much you bring the vermouth down
Another way is to use bitters and just a barspoon of olive dirt (and maybe dash of saline) and keep the other dimensions the same
And adding saline solution or salt is a great way to increase that salty flavor without the nastiness. Might be good even if you don’t use any olive juice at all.

2 oz white rum 3/4 oz lime 3/4 oz simple 6-8 mint leaves slap mint toss in collins glass add lime and simple then add rum top with crushed ice and club soda stir lightly and briefly to distribute mint top with ango garnish with huge mint bouquet
Moscow Mule
2 oz vodka 3/4 oz lime 3/4 oz ginger syrup shake add soda collins glass with ice lime garnish
Negroni
1 oz gin 1 oz sweet vermouth 1 oz Campari build in rocks glass fill with ice stir garnish with orange twist
Oaxacan Old Fashioned
1 oz tequila 1 oz mezcal 2 dashes mole bitters fat barspoon demerara orange peel garnish
Old Fashioned
2 oz bourbon, rum, rye or whatever 1/4 oz rich simple like demerara 3 dashes of ango 1 dash orange bitters build in rocks glass add ice stir garnish orange twist
Paloma
2 oz tequila 1 oz grapefruit 1/2 oz lime 1/2 oz demerara 5 dashes saline shake, add soda, then strain and add more soda grapefruit garnish add a bit of salt on top of liquid

2 oz Pimm's no. 1 3/4 oz lemon 3/4 oz simple 1 cucumber wheel in tin shake strain top with soda gently stir garnish with cucumber wheel
