2 Bar Spoons Grilled Peach Cordial

Combine all ingredients in a mixing glass, stir till properly diluted, strain over large ice rock, garnish & serve

1 1/2 oz Desolas Mezcal

1/2 oz Two James Nain Rouge Absinthe Verte

1/2 oz Oloroso Sherry

Barspoon of Ancho Reyes Verde

1/2 oz Lemon Juice

1 oz Yellow Bell Pepper Agave

2 Drops Salted Smoked Chili Oil

METHOD
Combine all ingredients in a small tin, fill with ice and shake till properly diluted. Strain into collins glass over cubed ice, top with crushed ice, garnish and serve.

1/2 oz Empress Gin 1908

1/2 oz Umeshu

1/4 oz Crème de Noyaux

1/4 oz Lemon

1 oz Sparkling Sake

METHOD
Combine all ingredients except sparkling sake in a small tin, fill with ice and shake till properly diluted add sparkling into the tin and double strain into a chilled coupe, express lemon and serve.
