How is Mevushal wine made today?
By “flash détente”. The grapes are quickly heated after being picked and then rapidly cooled in a vacuum. It is gentler and has less impact on taste than cooking.
What is Non-mevushal wine?
Wine that has not been cooked. Everything relating to the wine making must be performed by Sabbath-observing Jews. It is basically the highest class of kosher wine.
