This method works because
Liquid particles are small enough to pass through the filter paper whilst the solid particles are too large to pass through the filter paper.

Residue is used to name the solid that remains on the filter paper.
Filtrate is used to name the liquid that remains in the conical flask.

Why is a conical flask preferred to collect the filtrate rather than a beaker?
Conical flask has a narrow neck which supports the filter funnel whereas a beaker does not. This means the filter funnel will not be supported.
