what is shortening
shortening is dough mixtures such as shortcrust pastry shortbread which have a very tender crumbly melt in the mouth texture when baked
why when shortening does it have a very crumbly melt in the mouth tender taste
it’s because they have a relatively high fat content which is mixed in with the flour and prevents the gluten in the flour from forming longer molecules
