Sur lie
“On the lees”. One racking permitted to remove gross lees. Must stay in contact w/ lees after fermentation for winter after harvest, until bottling. Filtration permitted immediately before bottling. Bottling must take place March 1st-June 30th, or Oct. 15th-Nov. 30th following harvest. Must be bottled at winery where made. May not be released before 3rd Thursday in March following harvest.

Reliable but neutral, most planted variety in Loire Valley, 10,798 ha. Burgundian origins.
